I had icing left over from the music mini muffins… so I just ‘had’ to make some cupcakes to use it up, much to Andrew’s delight.
I still have a little icing left over… however i’m out of cocoa and after 2 days of entertaining and baking in a row, the kitchen needs a bit of work. Might dig up a simple vanilla cake recipe cause we can’t waste the icing 😀
Liz and Sammy came for lunch today to celebrate an early birthday for Liz. I made these mini muffins as a cake… and you guessed it they make ‘Happy Birthday to you Happy Birthday to you’ (that is all that would fit)
The icing is a first for me, it required heating sugar to a certain temp/time and mixing with egg whites. I was a little worried about it because all the steps are critical in timing and all done in the period of about 5 min. I got it right and it is really really really yummy…. tastes like marshmellows.
Each month at work two people are to arrange and cook lunch for everyone else. Cooking for 20 is very different than normal cooking, especially when the tools available are a bbq and a small microwave. My partner and I decided to do mexican.

And for after lunch, I made chilli cupcakes/muffins.
Angie (my mother in law) gave me the pieces of a gingerbread house at christmas for me to decorate. I still think it is cheating to have the gingerbread molded into shape but it was a lot of fun to put together and cheating is definately allowed when baking 😀

I had a little bit of time this weekend so I decided to enter the nappicino cupcake weekly competition.
The competition posts the cupcake recipe (brownie cupcakes) and we get to choose topping/decoration etc. I made orange juice icing with a walnut.
I made them this afternoon but as the temperature hasn’t cooled and there was no room in the fridge, I wasn’t able to do anything really pretty with the icing.
It was also a great excuse to pull out my grandfathers piping set.
